During the 16th century in England, it was often used as a substitute for hops in the production of beer. In Germany, it came to be known as “muscatel sage,” as its flavor can closely resemble that of the muscat grape used to make muscatel wines. The Germans would infuse the Clary Sage with elderflower and add it to Rhine wines to make a more potent varietal that caused increased intoxication. Today, its essence still flavors wines, beers, vermouths, and other liqueurs.
